  • 1 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon fresh cracked pepper
  • 1/4 cup fresh chopped dill (for sauce)
  • Zest of 1 lemon (for sauce)

Instructions

  1. Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. Cut baby red potatoes into wedges and place them in a mixing bowl.
  3. In a small bowl, mix olive oil, oregano, rosemary, garlic powder, paprika, kosher salt, and pepper.
  4. Toss the seasoning mixture over the potato wedges until evenly coated.
  5. Spread the wedges on the baking sheet in a single layer and bake for 15 minutes.
  6. Flip the wedges and bake for another 15 minutes until golden brown.
  7. Increase temperature to 500°F (260°C) and bake an additional 15 minutes; flip again and check for crispiness after another 5-10 minutes.
  8. While baking, combine yogurt sauce ingredients (dill and lemon zest) in a small bowl.
  9. Serve warm with yogurt sauce for dipping.
