  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • Fresh parsley (finely chopped)
  • 1 medium red onion (finely chopped)
  • 1/4 cup feta cheese (crumbled)
  • Tzatziki, aioli or lemon wedges (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the potatoes into uniform 1/3-inch sticks.
  3. Soak the cut fries in cold water for 10-15 minutes; drain and dry thoroughly.
