  • 3 bell peppers
  • 1 pound ground chicken breast
  • ⅔ cup uncooked white rice
  • ½ cup cherry tomatoes
  • ½ cup kalamata olives
  • ½ cup feta cheese
  • 2 tablespoons fresh dill
  • 1 small red onion
  • 2 cloves garlic
  • 1 zucchini

Instructions

  1. Preheat your oven to 350°F (175°C) and cook the rice as per package instructions.
  2. Cut the bell peppers horizontally and remove seeds; place them cut side up in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Cook ground chicken until no longer pink.
  4. Add diced onion, garlic, zucchini, and Italian seasoning; cook for another 2 minutes.
  5. In a mixing bowl, combine cooked rice with the chicken mixture, tomatoes, olives, feta cheese, and dill.
  6. Stuff each pepper with the filling and sprinkle additional feta on top.
  7. Pour water into the baking dish and cover with foil; bake for 40-45 minutes.
