  • ½ cup breadcrumbs
  • ⅓ cup crumbled feta cheese

  • 1 cup orzo pasta
  • Juice and zest of 2 lemons
  • Fresh herbs (parsley and dill)

Instructions

  1. In a mixing bowl, combine ground chicken, egg, breadcrumbs, feta cheese, parsley, oregano, garlic, lemon zest, salt, and pepper. Mix until just combined.
  2. Form the mixture into small meatballs (about 1 inch in diameter) and place on a lined baking sheet.
  3. Heat olive oil in a skillet over medium heat. Cook meatballs in batches for 6-8 minutes until browned and cooked through. Set aside.
  4. Boil chicken broth in a pot; add orzo and cook according to package instructions until al dente. Drain if necessary.
  5. In the same pot, melt butter over medium heat; add garlic and cook until fragrant. Stir in the cooked orzo with lemon juice and zest; season with salt and pepper.
