Greek Chicken Bowls are a vibrant and nutritious meal that brings the essence of the Mediterranean to your dining table. This delicious dish features marinated grilled chicken paired with fresh vegetables, fluffy rice or quinoa, and a zesty homemade tzatziki sauce.   • 4 small chicken breasts (about 1 1/4 pounds)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cups cooked rice or quinoa
  • 2 cups halved grape tomatoes
  • 2 cups diced cucumber
  • 4 cups shredded romaine lettuce
  • 1 cup sliced red onion
  • 1/2 cup feta cheese
  • Tzatziki sauce (made with Greek yogurt, grated cucumber, garlic, and fresh dill)

Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes in a bowl.
  2. Pound the chicken breasts for even cooking and marinate them in the mixture for at least 30 minutes.
  3. Make the tzatziki sauce by mixing Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, salt, and fresh dill in a separate bowl; refrigerate until ready to use.
  4. Cook rice or quinoa as per package instructions and chop your vegetables while the chicken marinates.
  5. Preheat an air fryer to 380°F (193°C) and cook the marinated chicken for about 10 minutes or until it reaches an internal temperature of 165°F (74°C).
  6. Slice the rested chicken and assemble your bowls with a base of rice/quinoa topped with veggies, sliced chicken, and tzatziki sauce.
