  • 2 tbsp vegetable oil
  • 2 tbsp unsalted butter
  • 2 large yellow onions, diced
  • 10 oz white mushrooms, halved (optional)
  • 6 garlic cloves, minced
  • ¼ cup sweet paprika
  • 2 tsp caraway seeds
  • 1 tsp dried thyme
  • 1.5 cups carrots, cut into pieces (optional)
  • 1 red bell pepper, chopped
  • 1 (14 oz) can fire roasted diced tomatoes
  • 3 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp beef bouillon
  • 2.53 cups low-sodium beef broth
  • 2 bay leaves
  • 3 medium Yukon Gold potatoes, chopped
  • ¼ cup low-sodium beef broth (optional for thickening)
  • 2 tbsp cornstarch (optional for thickening)
  • Nokedli, csipetke, or egg noodles
  • Sour cream
  • Salt and pepper to taste
  • Freshly chopped parsley (optional)

Instructions

  1. Season the cubed beef with salt and pepper; set aside.
  2. Preheat the oven to 325°F (if baking).
  3. In a Dutch oven, sear the beef in vegetable oil until browned; remove and set aside.
  4. Cook onions and mushrooms in butter until softened; add garlic and spices.
  5. Return beef to pot, add tomatoes, broth, and remaining ingredients.
  6. Cover and bake for about 2 hours or simmer on stovetop until tender.
