  • 3 tbsp. oil (coconut or vegetable)
  • 1 cup granulated sugar
  • 3 egg whites
  • 1/3 cup sour cream
  • 1/2 cup milk
  • 2 tsp. vanilla extract
  • 1 1/2 cups gluten-free flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 6 gluten-free chocolate sandwich cookies (crushed)
  • For frosting: 2 sticks butter (softened), 4 oz. cream cheese (softened), 4 cups powdered sugar, and additional crushed cookies.

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream together softened butter and sugar until fluffy. Mix in egg whites one at a time.
  3. Stir in sour cream, milk, and vanilla.
  4. In another bowl, whisk together gluten-free flour, baking powder, and salt; gradually add to the wet mixture.
  5. Fold in crushed cookies gently.
  6. Fill cupcake liners two-thirds full with batter; bake for about 22 minutes.
  7. For frosting, beat butter and cream cheese until smooth; gradually add powdered sugar and mix in vanilla and heavy cream.
  8. Once cupcakes are cool, frost them generously and top with additional crushed cookies.
