  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp salted butter, melted (for cinnamon sugar swirl)
  • 1 tbsp oat flour (for cinnamon sugar swirl)
  • 2 tbsp white sugar (for cinnamon sugar swirl)
  • 1/2 tbsp cinnamon (for cinnamon sugar swirl)
  • 1/4 cup salted butter, slightly softened (for crumble topping)
  • 1/4 cup light brown sugar (for crumble topping)
  • 1/4 cup almond flour (for crumble topping)
  • 1/2 cup oat flour (for crumble topping)
  • 2 tsp cinnamon (for crumble topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, blend softened butter, applesauce, eggs, sugar, and vanilla until smooth.
  3. Gradually mix in almond flour, oat flour, baking powder, and salt until combined.
  4. Prepare the cinnamon sugar filling by mixing melted butter, oat flour, white sugar, and cinnamon in a separate bowl.
  5. For the crumble topping, combine brown sugar, almond flour, oat flour, cinnamon, and softened butter until crumbly.
  6. Grease an 8×8 baking dish and layer half of the cake batter evenly in the dish.
  7. Sprinkle half of the cinnamon sugar filling on top; swirl gently into the batter.
  8. Pour in the remaining batter and repeat with the rest of the filling.
  9. Bake for 25 minutes; then add crumble topping and bake for an additional 18 minutes.
  10. Allow to cool before cutting into squares.
