  • 1 Cup Brown Sugar
  • 1 Cup Pureed Pumpkin
  • 1 Cup Dairy Free Milk (Coconut)
  • 3 tsp. Baking Powder
  • 2 Cups Gluten-Free All-Purpose Flour
  • 1 tsp. Xanthan Gum
  • 1 tsp. Pumpkin Pie Spice
  • Dash of Salt
  • 1 tsp. Cinnamon
  • ¼ tsp. Nutmeg
  • 2 Cups Powdered Sugar (for glaze)
  • 1 ½ tsp. Vanilla (for glaze)
  • ½ tsp. Cinnamon (for glaze)
  • ½ tsp. Maple Extract
  • ½ TBSP Coconut Milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a donut pan.
  2. In one bowl, whisk together eggs, sugars, vanilla, pumpkin puree, and coconut milk until smooth.
  3. In another bowl, mix gluten-free flour, baking powder, xanthan gum, spices, and salt.
  4. Combine wet and dry ingredients until just mixed; avoid overmixing.
  5. Pour batter into the donut pan halfway and bake for about 20 minutes or until a toothpick comes out clean.
  6. Cool donuts for 5 minutes before glazing with a mixture of powdered sugar, vanilla, cinnamon, maple extract, and coconut milk.
