  • 1/4 tsp Ground Ginger
  • 1/3 cup Granulated Sugar
  • 1/3 cup Dark Brown Sugar
  • 1/2 cup Vegetable Oil
  • 1/3 cup Full Flavored Molasses
  • 1 Large Egg (room temperature)
  • 1/4 cup Warm Water
  • 1 tsp Vanilla Extract
  • 1/2 cup Unsalted Butter (room temperature)
  • 8 oz Cream Cheese (room temperature)
  • 1 tsp Vanilla Extract
  • 2 cups Sifted Powdered Sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, mix sugars with vegetable oil until blended; then add molasses, egg, water, and vanilla.
  4. Combine wet and dry ingredients until smooth.
  5. Spoon rounded tablespoons onto prepared sheets; bake for 8-10 minutes until springy.
  6. Allow to cool before frosting with a blend of cream cheese, butter, vanilla, and powdered sugar.
