  • 3 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup rolled oats
  • 1/2 cup unsalted butter (softened)
  • 4 ounces cream cheese (full fat)
  • 1 1/22 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon whipping cream (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In one bowl, mix flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt. In another bowl, beat butter and sugars until creamy; mix in molasses and vanilla before adding the egg. Gradually combine dry ingredients with wet ingredients and stir in oats.
  3. Drop rounded tablespoons of dough onto prepared sheets and bake for about 9 minutes until edges are set.
  4. For the cream filling, beat softened butter and cream cheese until smooth; gradually add powdered sugar until desired sweetness is reached. Mix in vanilla and salt.
  5. Once cookies cool completely, spread filling on one cookie and top with another to create a sandwich.
