  • 117 grams confectioners' sugar
  • 100 grams egg whites (about 3 large)
  • 110 grams super fine white sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 57 grams white chocolate, melted
  • 1/2 cup unsalted butter, softened
  • 1 tablespoon fancy molasses

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Sift almond flour, confectioners' sugar, and spices into a bowl.
  3. Whip egg whites until soft peaks form; gradually add white sugar until stiff peaks form.
  4. Gently fold dry ingredients into whipped egg whites until combined; add food coloring if desired.
  5. Pipe small circles onto lined baking sheets and let rest for 30-60 minutes to form a skin.
  6. Bake for 16-20 minutes or until set.
  7. While cooling, prepare the filling by mixing softened butter and melted white chocolate; add confectioners' sugar and molasses until smooth.
  8. Assemble by pairing shells with filling in between.
