  • 4 pounds beef short ribs
  • 1 cup miso paste (white or yellow)
  • 1/2 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon freshly grated ginger
  • 2 cloves garlic, minced
  • 1/4 cup sesame oil
  • 2 cups beef broth

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. In a Dutch oven, heat sesame oil and sear seasoned short ribs on all sides until browned. Remove and set aside.
  3. In a mixing bowl, combine miso paste, soy sauce, rice vinegar, brown sugar, ginger, and garlic until smooth.
  4. Deglaze the pot with beef broth, scraping up browned bits.
  5. Return short ribs to the pot, pour the miso mixture over them, and add remaining broth.
  6. Cover and braise in the oven for 3 hours or until fork-tender.
  7. If desired, thicken sauce with cornstarch mixed with water before serving.
