  • Salt & pepper to taste
  • 6 tsp minced garlic
  • 6 tbsp butter
  • 1/2 cup chopped parsley

Instructions

  1. Cut the skirt steak to fit your skillet and pat dry with paper towels. Season generously with salt and pepper on both sides.
  2. Heat oil in a cast iron skillet over medium-high heat until very hot. Add the steak, browning each side for about 2-3 minutes for medium-rare.
  3. Remove the steak from the skillet and let it rest.
  4. In another skillet, melt butter over low heat, add minced garlic, and stir until lightly browned (about 1-2 minutes). Remove from heat immediately.
  5. Slice the rested steak against the grain into strips, pour warm garlic butter over, garnish with parsley, and serve immediately.
