  • 1 egg
  • 1 cup panko breadcrumbs
  • 1 cup oil (olive oil recommended)
  • 1 cup cooked corn
  • 1/4 cup feta cheese
  • 1/2 jalapeño (sliced)
  • 3 tbsp red onion (diced)
  • 2 tbsp cilantro
  • Pinch salt and pepper

Instructions

  1. Prepare the coating: In a bowl, mix flour, paprika, salt, and pepper. In another bowl, whisk the egg. Place panko breadcrumbs on a separate plate.
  2. Coat the tomatoes: Slice tomatoes into thick rounds. Dip each slice in flour mixture, then egg wash, and finally coat with panko breadcrumbs.
  3. Make the corn salsa: Combine cooked corn, feta cheese, jalapeño, red onion, cilantro, and seasoning in a mixing bowl; stir well.
  4. Fry the tomatoes: Heat oil in a skillet over medium-high heat. Fry tomato slices until golden brown on both sides (about 1 minute each). Drain on paper towels.
