  • 2 cups Panko bread crumbs
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika or chili powder
  • 23 large eggs
  • Cooking spray (olive oil or canola)
  • Optional garnishes: fresh oregano leaves, grated Parmesan cheese

Instructions

  1. Prepare three bowls: whisk eggs in one bowl, mix flour with garlic powder and paprika in another, and place Panko crumbs in the third.
  2. Drain olives and coat them lightly in the flour mixture, then dip each in the egg wash, followed by the Panko crumbs.
  3. Spray the coated olives generously with cooking spray, then arrange them in a single layer in the air fryer basket.
  4. Air fry at 400°F for 5 minutes; flip and spray again before cooking for an additional 3 minutes until golden brown.
