  • 3 cups honey
  • 9 cups water

Instructions

  1. Sterilize pint-sized canning jars and lids.
  2. Blanch peaches in boiling water for 30-60 seconds, then transfer them to ice water.
  3. Peel, pit, and slice peaches into desired sizes.
  4. In a saucepan, combine honey and water to create a light syrup; bring to a simmer until dissolved.
  5. Optionally add lemon juice to each jar. Pack peach slices into warm jars, leaving 1/2 inch headspace.
  6. Pour hot honey syrup over peaches and remove air bubbles before sealing.
  7. Process jars in a water bath for about 20 minutes.
