  • 160 g unsalted butter
  • 160 g granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 150 g Greek yogurt
  • 260 g all-purpose flour
  • 2 teaspoons baking powder
  • 300 g cherries
  • 2 tablespoons brown sugar
  • 1 teaspoon icing sugar
  • 12 tablespoons dry breadcrumbs (optional)

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a loaf pan by greasing it.
  2. Pit and chop 300g (10.5 oz) of fresh cherries and set aside.
  3. In a mixing bowl, cream together 160g (5.5 oz) unsalted butter and 160g (5.5 oz) granulated sugar until fluffy. Add in 1 teaspoon vanilla extract, 3 large eggs, and 150g (5.5 oz) Greek yogurt; mix until smooth.
  4. In another bowl, combine 260g (9 oz) all-purpose flour and 2 teaspoons baking powder; gradually add to the wet ingredients until just combined.
  5. Gently fold in two-thirds of the chopped cherries with a rubber spatula.
  6. Pour batter into the prepared pan, scatter remaining cherries on top, and sprinkle with brown sugar.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Cool in the pan for 15–20 minutes before transferring to a wire rack.
