  • 20g (2 tablespoons) Unsweetened Cocoa Powder
  • 50g (1/2 cup) Icing Sugar
  • 120g (1/2 cup) Cold Unsalted Butter
  • 1 Egg (room temperature)
  • 250g (9 oz) Dark Cooking Chocolate
  • 250ml (1 cup) Heavy Cream

Instructions

  1. Prepare the crust by mixing flour, cocoa powder, icing sugar, and salt. Cut in cold butter until crumbly. Add egg; combine into dough and chill for 30 minutes.
  2. Preheat oven to 180°C (350°F). Roll out chilled dough and fit into a tart pan. Prick bottom with a fork and bake for 15 minutes until slightly firm.
  3. For the ganache filling, heat heavy cream until boiling. Remove from heat; stir in chopped dark chocolate until smooth.
  4. Pour ganache into cooled tart shell; smooth evenly. Chill in refrigerator for at least 4 hours until set.
