  • 2 racks baby back ribs ( to 3 pounds each)
  • 2 tablespoons kosher salt
  • 2 tablespoons dark brown sugar
  • 2 teaspoons paprika
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons dry mustard powder
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1 teaspoon freshly ground black pepper
  • 3/4 cup apple juice

Instructions

  1. Mix dry rub ingredients in a bowl; reserve 2 tablespoons.
  2. Remove membrane from ribs using a sharp knife and paper towels.
  3. Coat ribs generously with the dry rub; wrap in plastic and chill overnight.
  4. Preheat grill to medium heat (350° to 450°F).
  5. Whisk reserved dry rub with apple juice and water for basting sauce.
  6. Double wrap each rib rack in heavy-duty aluminum foil.
  7. Grill wrapped ribs on medium-low heat for about 1 hour; turn occasionally.
  8. Let rest for 10 minutes before unwrapping; discard fat and foil.
