  • 3/4 cup unsalted butter, room temperature
  • 1 cup packed light brown sugar
  • 2 egg yolks, room temperature
  • 2 tsp vanilla extract
  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • 1 tbsp instant espresso powder
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 1/4 tsp pumpkin pie spice
  • 1/4 cup heavy cream
  • 2 tsp instant espresso powder
  • 4.5 oz white chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice in a bowl; set aside.
  3. In another bowl, cream butter and sugars until light and fluffy. Add egg yolks one at a time, followed by canned pumpkin and vanilla extract.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Drop spoonfuls onto prepared sheets and bake for about 12 minutes until edges are golden.
  6. For the filling, beat heavy cream until stiff peaks form; fold in mascarpone cheese, espresso powder, and vanilla.
  7. Once cookies cool completely, spread or pipe filling between two cookies.
