  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain rice
  • 1 cup fresh cilantro
  • 2 tablespoons lime juice (freshly squeezed)
  • 3 garlic cloves
  • 1 jalapeño pepper (adjust for spice preference)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray. Season chicken breasts with salt and pepper.
  2. In a medium pot, bring 2 cups of water to a boil. Add rice and a pinch of salt. Lower heat, cover, and simmer for about 18 minutes until cooked.
  3. Place seasoned chicken in the prepared baking dish and bake for 25-30 minutes until the internal temperature reaches at least 165°F (74°C).
  4. While chicken bakes, blend cilantro, garlic, lime juice, jalapeño, and olive oil until smooth. Season with salt to taste.
  5. Once cooked, fluff rice with a fork on plates. Top each serving with sliced chicken and drizzle generously with green sauce.
