  • ¾ cup packed brown sugar (150g)
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 box (3.4 oz) instant vanilla pudding mix
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1¼ cups all-purpose flour (155g)
  • ¼ cup red and blue sprinkles
  • ¾ cup M&Ms

Instructions

  1. Preheat your oven to 350°F (175°C) and line cookie sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter and brown sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. Add the pudding mix, baking soda, and salt; stir until incorporated.
  5. Gradually add in the flour, followed by the sprinkles and M&Ms.
  6. Scoop tablespoon-sized balls of dough onto the prepared cookie sheets, spacing them about 2 inches apart.
  7. Chill the dough for at least 30 minutes before baking.
  8. Bake for 9-11 minutes or until edges turn golden brown.
  9. Let cool on the cookie sheet for about 5 minutes before transferring to a wire rack.
