  • 1/4 cup powdered sugar
  • 1 large egg yolk
  • 1 cup all-purpose flour
  • 3/4 pound fresh figs
  • 8 tablespoons almond flour
  • 2 large eggs
  • 1/2 cup granulated sugar

Instructions

  1. Prepare the shortcrust pastry by creaming softened butter and powdered sugar. Add egg yolk, heavy cream, and vanilla; mix well. Gradually incorporate flour and almond flour until a dough forms.
  2. Chill the dough for about 30 minutes, then roll it out to fit your tart pan and bake at 350°F (175°C) for 15 minutes until lightly golden.
  3. For the almond cream filling, beat butter and sugar together until light, then mix in eggs one at a time, followed by rum, vanilla, almond extract, almond flour, and salt.
  4. Spread fig jam over the cooled crust, pour in the almond cream filling, and arrange quartered figs on top before baking for an additional 45 minutes.
  5. Allow to cool completely before serving dusted with powdered sugar.
