  • 3 tablespoons powdered pectin
  • 2 tablespoons bottled lemon juice
  • 2 1/2 cups granulated sugar

Instructions

  1. Simmer red wine and rosemary in a saucepan; steep for 30 minutes.
  2. Sterilize canning jars in boiling water.
  3. Strain the infused wine into another saucepan; discard rosemary.
  4. Add figs, pectin, and lemon juice to strained wine; bring to a boil while stirring.
  5. Stir in sugar until dissolved and boil for one minute.
  6. Fill sterilized jars with hot jam, leaving a 1/4-inch headspace.
  7. Process jars in boiling water for 10 minutes before cooling.
