  • 125g unsliced brioche loaf
  • 20g unsalted butter
  • 150g soft goat’s cheese (or vegetarian cheese)
  • 50g full-fat soft cheese
  • Fresh thyme sprigs
  • 2 large or 3 medium figs (cut into wedges)
  • Clear honey (for drizzling)

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Slice the brioche loaf into thick slices (about 2cm).
  3. Spread unsalted butter on one side of each slice.
  4. Place slices butter-side up on a baking tray and bake for about 10 minutes until golden brown.
  5. In a bowl, mix goat’s cheese and soft cheese until smooth.
  6. Spread the cheese mixture on each toasted brioche slice.
  7. Top with fig wedges and garnish with thyme.
  8. Drizzle honey over the toasts and serve warm.
