  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 tbsp coconut oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 can (14 oz) full-fat coconut milk
  • 1 cup beef broth
  • 2 tsp soy sauce or fish sauce

Instructions

  1. Heat coconut oil in a large pot over medium heat. Sauté onion until translucent, about 5 minutes. Add garlic and ginger; cook for another minute.
  2. Increase heat and add beef cubes; brown on all sides (5–7 minutes).
  3. Stir in red curry paste, turmeric, cumin, and chili flakes; cook for 2 minutes.
  4. Pour in coconut milk and beef broth; add soy sauce or fish sauce. Mix well.
  5. Bring to a gentle simmer; cover and reduce heat to low. Let simmer for about 1.5 hours until beef is tender.
  6. Serve hot over cooked rice with garlic naan on the side and garnish with sliced chili.
