  • 1 cup crumbled feta cheese
  • ½ cup dried cranberries
  • ½ cup cucumber, diced
  • ½ red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 3 tablespoons olive oil (for dressing)
  • 2 tablespoons fresh lemon juice (for dressing)
  • Salt and pepper to taste

Instructions

  1. Cook the rigatoni in a large pot of salted boiling water until al dente (about 10 minutes). Drain and rinse with cold water.
