  • 225 g raisins
  • 225 g currants
  • 225 g cherries
  • 175 g butter (softened)
  • 175 g light brown sugar
  • 4 large eggs (beaten)
  • 175 g plain flour
  • 3 tablespoons brandy (plus extra for brushing)
  • 500 g marzipan
  • 500 g ready-to-roll fondant

Instructions

  1. Soak chopped dried apricots, raisins, currants, and halved cherries in 3 tablespoons of brandy for at least 30 minutes.
  2. Preheat your oven to 160°C (320°F) and lightly grease a baking tray.
  3. Cream together the softened butter and light brown sugar until fluffy.
  4. Gradually add beaten eggs and sift in the plain flour; mix until just combined.
  5. Fold in the soaked fruits along with any leftover brandy.
  6. Pour the mixture into the prepared tray and smooth out the top before baking for about 1 hour or until cooked through.
  7. Cool completely before brushing with extra brandy, covering with warmed apricot jam, then rolling out marzipan and fondant on top.
