  • 2 lbs organic lamb rib chops
  • 6 garlic cloves
  • 2 sprigs fresh thyme
  • ½ cup premium pomegranate juice
  • 1 cup premium pomegranate juice
  • 2 Tbsps unsalted butter
  • 2 Tbsps Extra virgin olive oil
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • 1 Tbsp cornstarch
  • 3 Tbsps warm water

Instructions

  1. In a bowl, mix crushed garlic, thyme, olive oil, sea salt, black pepper, garlic powder, and parsley. Rub this marinade over the lamb chops and let them sit for at least 30 minutes.
  2. Preheat a cast-iron skillet over medium-high heat and sear the marinated chops for 3–4 minutes on each side until browned.
  3. For the sauce, heat ½ cup pomegranate juice with butter in a saucepan until thickened with cornstarch mixed with warm water. Add the remaining pomegranate juice.
  4. Pour the sauce over the seared lamb in the skillet. Cover and simmer for 10–15 minutes until an internal temperature of 145°F is reached.
  5. Let rest before serving with extra sauce drizzled on top.
