  • 8 oz rotini pasta
  • 2 cups Brussels sprouts, diced
  • 2 cups butternut squash, diced
  • 2 cups honeycrisp apple, diced
  • 4 oz goat cheese
  • ¼ cup dried cranberries (optional)
  • Maple dijon dressing (made with balsamic vinegar, mustard, maple syrup, garlic)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss Brussels sprouts and butternut squash in olive oil, thyme, salt, and pepper. Roast for 20 minutes.
  3. Add apples to the baking sheet and roast for an additional 10–15 minutes until tender.
  4. Cook pasta according to package instructions; drain and toss with olive oil.
  5. Whisk together dressing ingredients until emulsified.
  6. Combine roasted veggies, pasta, goat cheese, cranberries (if using), and dressing in a large bowl. Toss gently to mix.
