  • 3/4 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract
  • 1 cup chopped dark chocolate

Instructions

  1. Melt unsalted butter in a saucepan over medium heat until amber in color and nutty aroma develops.
  2. Stir in instant espresso and set aside to cool slightly.
  3. In a separate bowl, mix flour, cornstarch, baking soda, and sea salt.
  4. Beat cooled butter mixture with both sugars until combined; add egg, egg yolk, and vanilla extract.
  5. Gradually mix in dry ingredients until just combined; fold in chopped chocolate.
  6. Chill the dough for at least one hour.
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
