Ingredients

  • 12 large eggs
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons finely diced red onion
  • 1 tablespoon finely diced jalapeño (optional)
  • Paprika for garnish

Instructions

  1. Boil the eggs in a saucepan covered with water. Bring to a boil, then remove from heat and cover for 10 minutes.
  2. Cool eggs in an ice bath until completely chilled. Peel and slice in half lengthwise.
  3. In a mixing bowl, mash yolks with mayonnaise, sour cream, cilantro, lime juice, chili powder, garlic powder, salt, and pepper until smooth.
  4. Fold in cotija cheese, red onion, and jalapeño if using.
  5. Spoon or pipe the mixture into egg whites. Garnish with paprika before serving.
