  • 2 cups shelled edamame
  • 2 cups frozen organic corn
  • 1 red bell pepper, chopped
  • 1/2 cup finely chopped red onion
  • 1/3 cup chopped green onion
  • Fresh cilantro for garnish
  • Juice of 2 limes
  • 1/4 cup avocado oil
  • 2 tablespoons red apple cider vinegar
  • 1 tablespoon honey (or agave)
  • Sea salt and black pepper to taste
  • 1 teaspoon cumin

Instructions

  1. Cook edamame according to package instructions. If using pods, boil until tender and pop out the soybeans.
  2. While edamame cooks, steam or sauté frozen corn until heated through.
  3. In a large bowl, combine cooked edamame, corn, chopped red bell pepper, red onion, and green onion.
  4. In a mason jar, mix lime juice, avocado oil, vinegar, honey, salt, pepper, and cumin. Shake well.
  5. Pour the dressing over the salad mixture and toss to coat evenly. Garnish with cilantro before serving.
