  • 2 lbs chicken breasts
  • 4 cups chicken broth
  • 2 cans white beans, drained and rinsed
  • 2 cans green chiles
  • 1 can fire-roasted tomatoes
  • 1 can corn, drained and rinsed
  • 1 lime, juiced
  • 1/2 cup Greek yogurt
  • Cilantro
  • Cheddar cheese
  • Jalapeno
  • Lime wedges
  • Tortilla chips

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion until soft; add garlic and spices.
  2. Mash one cup of white beans until smooth.
  3. Add chicken broth, both mashed and whole beans, green chiles, tomatoes, corn, and raw chicken.
