  • 34 boneless, skinless chicken breasts
  • 4 medium carrots, sliced
  • 3 celery stalks, chopped
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 14 oz canned diced tomatoes
  • Dried thyme and bay leaves

Instructions

  1. Chop all vegetables into uniform sizes: dice onion finely, slice carrots into rounds, chop celery stalks, and mince garlic.
  2. Place the chopped vegetables in the bottom of the slow cooker. Lay the boneless chicken breasts on top.
  3. Season with salt, pepper, thyme, and bay leaves; pour diced tomatoes over the chicken.
  4. Add chicken broth until ingredients are just covered; do not stir.
  5. Cover and cook on low for 6 hours or high for 3 hours until chicken is tender.
  6. Remove chicken from pot and shred it using two forks; return to stew before serving.
