  • 1 lb boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 4 cups chicken broth
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper

Instructions

  1. Place chicken breasts in the crockpot. Add white beans, green chilies, chicken broth, onion, garlic, and all seasonings.
  2. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked through.
  3. Remove chicken; shred using two forks and return to the pot.
  4. Stir in cream cheese and heavy cream until melted and mixed well.
  5. Serve hot garnished with chopped cilantro and lime wedges.
