  • 1 can black beans (15 oz)
  • 1 can corn (15.25 oz, undrained)
  • 1 can Rotel tomatoes (10 oz, undrained)
  • 1 package ranch dressing mix
  • 2 tsp spices (cumin, chili powder, onion powder)
  • 1 package light cream cheese (8 oz)
  • 2 chicken breasts

Instructions

  1. Rinse and drain black beans.
  2. Layer chicken breasts at the bottom of the crock pot.
  3. Add corn and Rotel tomatoes on top of the chicken.
  4. Sprinkle rinsed black beans over everything.
  5. Mix seasonings together and sprinkle on top.
  6. Place cream cheese block on top without stirring.
  7. Cover and cook on low for 6 to 8 hours.
  8. Shred cooked chicken and mix back into chili before serving.
