Ingredients

  • 5 Persian cucumbers
  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/21 tbsp sugar (to taste)
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp sesame seeds
  • Optional: 1/2 tbsp minced garlic

Instructions

  1. Rinse the cucumbers and slice them at an angle into oval-shaped pieces.
  2. Place cucumber slices in a mixing bowl, sprinkle with salt, and mix well. Refrigerate for at least 20 minutes to draw out excess moisture.
  3. After chilling, drain the cucumbers and rinse briefly under cold water.
  4. In the same bowl, add sesame oil, soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and optional garlic. Mix until well combined.
  5. Serve chilled and enjoy!
