  • 1/2 cup Dutch process cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 2 large eggs
  • 1/4 cup unsalted butter (melted)
  • 1/4 cup canola oil (or melted coconut oil)
  • 3/4 cup packed light brown sugar
  • 1 tsp pure vanilla extract
  • 1 1/2 cups shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and sea salt; set aside.
  3. In a large mixing bowl, combine eggs, melted butter, oil, brown sugar, and vanilla until smooth.
  4. Gradually add dry mixture to wet ingredients, stirring gently until just combined. Fold in shredded zucchini and three-quarters of the chocolate chips.
  5. Pour batter into the prepared loaf pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50–60 minutes or until a toothpick inserted into the center comes out mostly clean.
  7. Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
