  • 6 hard-boiled eggs
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, diced
  • 2 celery ribs, chopped
  • Fresh chives for garnish
  • Sea salt and paprika to taste

Instructions

  1. Cook the macaroni in boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Halve the hard-boiled eggs; separate yolks from whites. Chop the egg whites and add to the macaroni bowl.
  3. Mash yolks in a small bowl; mix with Greek yogurt, mayonnaise, and Dijon mustard until smooth.
  4. Combine chopped onion and celery with macaroni; pour in the yolk mixture and mix thoroughly.
  5. Season with sea salt, garnish with chives and paprika, then chill for at least an hour before serving.
