  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic (minced)
  • ¼ cup fresh parsley (chopped)

  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Rinse artichokes under cold water; trim the top third and remove tough outer leaves. Snip leaf tips with kitchen scissors and rub cut surfaces with lemon juice.
  2. In a bowl, combine breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, olive oil, salt, and pepper until well mixed.
  3. Gently open artichoke leaves and fill each leaf generously with the stuffing mixture.
  4. Place stuffed artichokes in a baking dish with an inch of water or broth. Drizzle with olive oil and cover loosely with foil.
  5. Bake for about 45-50 minutes until leaves are tender. Remove foil during the last 10 minutes for crisping.
