  • ¼ cup unsalted butter (softened)
  • ½ cup granulated sugar
  • ½ cup brown sugar (packed)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (sifted)
  • 4 oz cream cheese (softened)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, mix rolled oats, flour, baking soda, cinnamon, and salt until combined.
  3. In another bowl, beat softened butter with granulated and brown sugars until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture; mix well.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Drop rounded tablespoons of dough onto the baking sheets about two inches apart.
  7. Bake for approximately 10 minutes or until lightly golden around the edges. Cool completely before adding filling.
  8. For the filling, mix powdered sugar with softened cream cheese until smooth and creamy.
  9. Spread filling between two cooled cookies.
