  • 4 pounds center-cut pork loin
  • 5 slices smoked bacon
  • 1 large diced shallot
  • 4 cups fresh baby spinach
  • 6 minced garlic cloves
  • 1 small peeled and finely diced apple
  • 1/2 cup chopped dried cranberries
  • 2 tablespoons maple syrup
  • 1 1/2 tablespoons dijon mustard
  • 1 tablespoon sea salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • 3 tablespoons butter
  • 2 sprigs of fresh rosemary
  • 2 sprigs of fresh thyme
  • 10 whole garlic cloves
  • 1 cup chicken broth
  • 1 1/2 tablespoons butter (for serving)
  • 1 1/2 tablespoons all-purpose flour
  • 1 cup strained pan drippings broth
  • 4 medium sweet potatoes
  • 2 tablespoons avocado or olive oil
  • 2 tablespoons maple syrup
  • 1 to 1 1/2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons herbs de provence

Instructions

  1. In a skillet, cook diced bacon until crispy. Remove and sauté shallots and garlic, then add spinach until wilted. Stir in apple, cranberries, maple syrup, mustard, spices, and cooked bacon.
  2. Preheat oven to 350°F (175°C). Butterfly the pork loin, season inside with salt and pepper, and evenly spread the stuffing.
  3. Roll tightly and secure with kitchen twine. Sear in a skillet with butter until golden brown.
  4. Transfer to a roasting pan with garlic cloves and chicken broth; roast until internal temperature reaches 145°F (approximately 90 minutes).
  5. Make pan sauce by combining melted butter and flour in a saucepan; whisk in broth and drippings until thickened.
