  • 4 large bell peppers (red, yellow, or green)
  • 34 boneless skinless chicken breasts
  • 1 medium onion
  • 3 garlic cloves
  • 2 tablespoons fajita seasoning
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick spray.
  2. Slice the tops off the bell peppers and remove seeds; set aside.
  3. In a skillet, sauté diced onion until translucent. Add minced garlic and chicken seasoned with fajita seasoning; cook until the chicken is no longer pink.
  4. Chop cooked chicken into pieces and mix with remaining filling ingredients.
  5. Stuff each pepper generously with the mixture and top with cheese.
  6. Cover with foil and bake for 30 minutes; uncover for the last 5 minutes to brown the cheese.
