Instructions

  1. Preheat the oven to 400°F (200°C). Halve the butternut squash lengthwise and scoop out the seeds. Place cut-side down on a parchment-lined baking sheet.
  2. Roast for 30-40 minutes until tender. Let cool slightly before removing the flesh.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
  4. Incorporate the roasted squash flesh and vegetable broth; blend until smooth using an immersion blender or regular blender.
