  • 67 medium Yukon gold potatoes (3 lbs), thinly sliced
  • ½ white or yellow onion, sliced
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt (plus more to taste)
  • Freshly ground black pepper
  • ½ cup Gruyere cheese (or extra cheddar)
  • ¼ cup grated Parmesan cheese
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 2-quart baking dish.
  2. Layer the sliced potatoes and onion in the baking dish.
  3. In a saucepan over medium heat, melt butter. Gradually whisk in flour followed by almond milk until smooth and thickened.
  4. Stir in shredded cheddar, garlic powder, salt, and pepper; adjust seasoning to taste.
  5. Pour the cheese sauce evenly over the potatoes and onions.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil, add Gruyere and Parmesan on top, then bake uncovered for an additional 30-45 minutes until golden brown.
