  • 1/2 head cabbage
  • 2 carrots
  • 1/4 red onion
  • 1 jalapeno
  • 1/2 cup water
  • 1/2 cup white vinegar
  • 1 Tbsp dried oregano
  • 2 tsp salt

Instructions

  1. 1. Bring water to a low boil and add shredded cabbage. Let it sit for 8–10 minutes before draining.
  2. 2. In a large bowl, combine the drained cabbage, julienne-cut carrots, sliced red onion, and jalapeno.
  3. 3. In another bowl, whisk together water, white vinegar, dried oregano, and salt.
  4. 4. Pour the dressing over the vegetable mixture and toss until evenly coated.
  5. 5. Transfer to mason jars or containers and refrigerate for at least an hour before serving.
