  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • 1 large lime (zested and juiced)
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. Make the dressing by mixing mayonnaise, sour cream, lime zest, lime juice, dill, Dijon mustard, minced garlic, kosher salt, and pepper until smooth.
  2. Boil water in a pot and cook shrimp for 2 to 3 minutes until pink. Remove from heat.
  3. Prepare an ice water bath while shrimp cook. Transfer cooked shrimp into the ice bath for about 3 minutes before draining.
  4. In a mixing bowl, combine chopped shrimp, green onions, diced cucumber, and the prepared dressing. Gently stir to coat.
