  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. Prepare the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper in a bowl. Set aside.
  2. Boil water in a large pot and add shrimp. Cook for 2 to 3 minutes until pink and opaque.
  3. Prepare an ice water bath while shrimp cook. Transfer cooked shrimp to the ice bath using a skimmer to cool for about 3 minutes before draining.
  4. Chop cooled shrimp into bite-sized pieces and combine with cucumber, green onion, and dressing in a mixing bowl until well-coated.
